Ingredients for 1 servings:

  • 1 kg quince(s) (puree)
  • 1 bag(s) of gelling sugar, 2:1
  • some lemon juice

Instructions

Rub the ripe quinces with a cloth and cut them into wedges all around with a knife. Remove the wedges and add them, along with the core, to the pot. Cover the quinces with water. Let it boil for 1 hour. Strain and reserve the juice (for jelly), then run the quinces through a food mill. Prepare the puree along with the lemon juice and preserving sugar according to the instructions and pour into jars while still hot. You can also make quince jelly from the juice; you also need 1 liter of juice, 2:1 preserving sugar, and lemon.
