Quince jelly with vanilla

Ingredients for 6 servings:

  • 1 ¼ kg quince(s)
  • 2 vanilla pods
  • 1 kg gelling sugar, 1:1
  • 20 ml liqueur (almond liqueur)

Instructions

Working time approx. 1 hour 10 minutes; Total time approx. 1 hour 10 minutes

Roughly chop the quinces and bring to a boil with 1.25 liters of water. Simmer for 25-30 minutes, until the quinces are soft, then drain in a sieve. Measure 1 liter of juice, adding a little water if necessary. Score the vanilla pods and scrape out the seeds. Combine the vanilla seeds and pods, quince juice, and gelling sugar in a saucepan and bring to a boil over medium heat. Boil gently for 4 minutes, stirring continuously. Remove the vanilla pods and immediately ladle the quince jelly into hot, rinsed twist-off jars. Seal tightly and turn the jars upside down for 5 minutes.
