Ingredients for 1 servings:
- 350 g quinoa, cooked
- 80 ml buttermilk
- 4 eggs
- 1 tsp vanilla extract
- 250 g honey
- 120 ml coconut oil
- 80 g baking cocoa
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- Coconut oil for the mold
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes
Preheat the oven to 180°C (top/bottom heat) and line the bottom of a springform pan with baking paper. Grease the sides of the pan with coconut oil. Place the cooked quinoa in a bowl. Add the eggs, buttermilk, honey, vanilla extract, and coconut oil, and mix all ingredients well with a hand mixer. Sift the cocoa, salt, and baking soda into the baking powder, mix well, and stir into the batter. Pour the batter into the pan and smooth it evenly. Bake on the middle rack for about 50 minutes. Let cool in the pan, then turn out onto a serving platter and cut into pieces.
