Ingredients for 8 servings:
- 1 onion(s), red
- 250 g mushrooms (e.g. button mushrooms, porcini mushrooms, oyster mushrooms)
- 8 sprigs of thyme
- 2 tbsp olive oil
- Salt and pepper from the mill
- 3 eggs, size M
- 150 ml whipped cream
- 20 g Parmesan, grated

Slice the onion into rings, clean and finely chop the mushrooms, and pick the thyme leaves. Heat oil in a pan. Fry the mushrooms for about 5 minutes. Toward the end of the cooking time, add the onion and thyme. Season the mushrooms with salt and pepper. Whisk the eggs, cream, and Parmesan cheese, then season with salt and pepper. Divide a few mushrooms between each raclette pan and pour over a little egg wash. Bake in the hot raclette grill until the egg is set. 128 kcal per serving.
