Raspberry Tiramisu

Ingredients for 6 servings:

  • 150 g ladyfingers
  • 3 tbsp orange juice
  • 500 g low-fat curd cheese
  • 300 g yogurt (vanilla flavor)
  • 1 packet of vanilla sugar
  • 3 tbsp powdered sugar
  • 500 g raspberries, frozen
  • Cocoa powder for dusting
  • 3 tbsp orange liqueur

Working time approx. 25 minutes; Total time approx. 25 minutes

Line a baking dish with half of the sponge fingers. Mix the orange juice and orange liqueur (if children are eating, replace the liqueur with orange juice) and drizzle half of it over the sponge fingers. Mix the quark with the vanilla yogurt, powdered sugar, and vanilla sugar. Thaw the raspberries and puree. Spread half of the raspberry puree over the sponge fingers. Spread half of the quark cream on top. Layer the remaining sponge fingers on top and drizzle with more orange juice and orange liqueur. Layer the remaining raspberry and quark mixture on top. Refrigerate the tiramisu (preferably overnight). Dust with cocoa powder, if desired, and garnish with fresh mint leaves and whole raspberries. Tip: Other frozen or canned fruits such as mango, peaches, apricots, etc., can also be used here, as can other fruit juices.
