Red cabbage – fruit – salad

Ingredients for 2 servings:

  • 250 g red cabbage
  • 1 small onion(s)
  • 2 orange(s), pulp of 1, juice of 1
  • 1 apple
  • 1 banana(s)
  • ½ lemon(s), juice
  • 50 g raisins
  • 1 tbsp honey
  • 2 tbsp oil
  • e.g. salt and pepper
  • 1 handful of nuts, coarsely grated

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Dice the onion, apple, and 1 orange, and mash the banana. Stir in the nuts, then toss everything with the juice, oil, and honey. Season with salt and pepper to taste. Grate in the red cabbage and let the salad marinate for at least 30 minutes. You can also replace the lemon juice with buttermilk. This serves 3 or 4 as an appetizer.
