Red gooseberry jam with mint

Ingredients for 1 servings:

  • 1 kg gooseberries, red (cleaned)
  • ½ kg gelling sugar, 1:2
  • some mint leaves

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Let the gooseberries (halved if necessary) steep with the gelling sugar for about 1-2 hours. Roughly puree with a hand blender, then boil briskly for 5-10 minutes while stirring. Finally, add a few very finely chopped mint leaves. Pour the hot jam into jars, seal immediately, and leave the lids on for 5 minutes. You can, of course, use yellow gooseberries, but I always make the jam with red ones because I have them in my garden. It has a very refreshing mint flavor, which, of course, depends on the amount of mint used.
