Ingredients for 5 servings:

  • 1 kg blackberries (blackberry puree)
  • 500 g pear(s), peeled and weighed
  • 1 packet of gelling sugar (3:1)

velvety blackberry-pear jam

Heat the blackberries, puree them, and strain them through a sieve. Weigh out 1 kg of this fine, pitted jam. Peel the pears, cut them into wedges, remove the cores, and weigh out 500 g. Puree the pear slices into the blackberry jam. Add the gelling sugar and prepare according to the package instructions. It doesn’t really matter which gelling sugar you use. The important thing is the blackberry:pear ratio (2:1), so the jam isn’t too pear-heavy, but still velvety enough. The pears turn the blackberry jam into a very smooth, velvety spread that melts in your mouth…
