Red wine – orange – sauce

Ingredients for 4 servings:

  • 50 g sugar
  • 1 small onion(s), finely chopped
  • 50 ml orange juice
  • 200 ml red wine, dry
  • 1 small cinnamon stick
  • salt and pepper
  • 1 tsp, leveled cornstarch
  • 50 ml red wine, dry

very nice with roast duck breast

Lightly caramelize the sugar in a saucepan, add the diced onion, deglaze with orange juice and red wine, and bring to a boil briefly. Add the cinnamon stick and simmer gently for about 25 minutes. Blend a little cornstarch with red wine until smooth and thicken the sauce. Bring back to a boil briefly and season with salt and pepper. Mashed potatoes and celery, for example, would be a great side dish.
