Rolls with brown millet

Ingredients for 1 servings:

  • 250 g millet (brown millet)
  • 250 g spelt
  • 500 g spelt flour
  • 2 tsp honey
  • 22 g salt
  • 12 g dry yeast
  • 600 ml water, lukewarm

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Grind the grain. Then knead all ingredients together thoroughly and let it rise for approximately 60-90 minutes. Knead again briefly by hand, cut off dough, shape into rolls, and then form. Cover the dough pieces with cling film and let it rise for another 60 minutes. Preheat oven to 250 degrees Celsius (480 degrees Fahrenheit), place the rolls in the oven, and immediately spray with a spray bottle. Set oven to 200 degrees Celsius (400 degrees Fahrenheit) and spray 2-3 times within the first 10 minutes. Baking time: 25-35 minutes, depending on the weight of the dough pieces.
