Rootwork – Pasta Sauce

Ingredients for 4 servings:

  • 1 large onion(s)
  • 1 small carrot(s)
  • ¼ celery root
  • 1 parsley root
  • 100 g breakfast bacon
  • 250 g sour cream
  • salt and pepper
  • 400g spaghetti
  • possibly parsley

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the spaghetti as usual. Sauté the finely chopped onion and bacon, add the finely chopped root vegetables and saute them. Season with salt (depending on the saltiness of the bacon), pepper, and finely chopped parsley, if desired. Add a cup of sour cream and stir. Pour over the al dente spaghetti. Tips: Don’t use too large a carrot, as this will make the sauce too sweet. Suitable for vegetarians if you simply omit the bacon.
