Ingredients for 4 servings:

  • 1 pork fillet(s) (loin)
  • 5 garlic cloves
  • 3 sprigs rosemary
  • salt and pepper
  • Clarified butter

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Trim the pork loin. Pierce it all over with a sharp knife at intervals of 2-3 centimeters and stud it with quartered garlic cloves. Wrap the loin with rosemary sprigs and secure with roasting twine. Brown the loin all over in clarified butter, season with pepper and salt, and finish cooking in the oven at 150°C for 20 minutes. Parsley potatoes are a great side dish.
