Ingredients for 4 servings:
- 200 g Flour, Grano duro (durum wheat flour)
- 2 tbsp water
- Salt
- 1 egg(s), beaten
- 100 g cheese (Pecorino), fresh, mild (finely grated)
- ½ lemon(s), grated rind
- Oil, neutral for frying
- Honey (fir or bitter honey)
- ¼ orange(s), peeled

Fried dumplings with pecorino filling and honey sauce
Dough: Mix Grano Duro with the water and salt to form a dough. The dough should not be sticky. Roll out thinly (1 mm) using a pasta machine or rolling pin. Cut out circles of about 10 cm. So you will need 8 circles for four Sehedas. Filling: Mix the grated cheese with the grated lemon and orange zest. Place the filling in the center of the four circles. Brush the edges lightly with egg yolk. Cover and press down firmly. Add about 2 cm of oil to a pan, heat it up, and fry the dumplings one after the other. Constantly pour on the fat. The dumplings will puff up. Fry until golden yellow and crispy. Remove from the pan and drain. To serve, warm the honey, make a small slit in the Seheda on the plate with a spoon, and pour in the honey. Careful, it’s hot!! Enjoy! To keep it from getting too hot, you can also serve it with vanilla ice cream.
