Ingredients
- 250 g Macaroni
- 400 g Sausages, coarse
- 400 g Broccoli
- 5 tbsp Tomato paste
- 1 Onion
- 3 Garlic cloves
- Olive oil
- Sea salt
- Pepper from the grinder
- Sugar
- 150 ml Strained tomatoes
- 50 ml Balsamic vinegar
- 1 tsp Dried oregano
- Basil
- 150 ml Apple juice
- Parmesan
Instructions
- Crumble the sausages with a fork and fry them with a little olive oil. Clean the broccoli and blanch in salted boiling water. Finely chop the onion and garlic and add to the sausages.
- Add oregano and tomato paste and roast - deglaze with balsamic vinegar and apple juice. Pour the tomatoes on top and let simmer for about 10 minutes. Season with salt, pepper and sugar.
- In the meantime, add the pasta water and cook the pasta al dente. Add the broccoli to the sauce and fold in - do not cook anymore!
- Drain the pasta and add to the sauce with a little pasta water.
- Mix everything well, let it steep briefly and serve with Parmesan and fresh basil.
