Ingredients
 

  • 250 g Macaroni
  • 400 g Sausages, coarse
  • 400 g Broccoli
  • 5 tbsp Tomato paste
  • 1 Onion
  • 3 Garlic cloves
  • Olive oil
  • Sea salt
  • Pepper from the grinder
  • Sugar
  • 150 ml Strained tomatoes
  • 50 ml Balsamic vinegar
  • 1 tsp Dried oregano
  • Basil
  • 150 ml Apple juice
  • Parmesan

Instructions
 

  • Crumble the sausages with a fork and fry them with a little olive oil. Clean the broccoli and blanch in salted boiling water. Finely chop the onion and garlic and add to the sausages.
  • Add oregano and tomato paste and roast - deglaze with balsamic vinegar and apple juice. Pour the tomatoes on top and let simmer for about 10 minutes. Season with salt, pepper and sugar.
  • In the meantime, add the pasta water and cook the pasta al dente. Add the broccoli to the sauce and fold in - do not cook anymore!
  • Drain the pasta and add to the sauce with a little pasta water.
  • Mix everything well, let it steep briefly and serve with Parmesan and fresh basil.
