Schrat's simple kale soup with spelled

Ingredients for 4 servings:

  • 1,000 g kale, frozen
  • 750 g smoked belly, cooked
  • 2 ½ liters of beef broth
  • 200 g spelt
  • 1 onion(s)
  • 1 tbsp olive oil
  • Pepper, black from the mill
  • Salt

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Cook the spelt in 0.5 liters of broth for 15 minutes, then turn off the heat and let the spelt swell for another 60 minutes. Dice the onion and sauté it in hot olive oil in a sufficiently large pot. Add the kale and top up with 2 liters of broth. Simmer gently for about 60 minutes. Dice the bacon and add it to the kale with the swollen spelt after 50 minutes, and simmer for another 10 minutes. Season with salt and pepper.
