Semolina casserole with berries

Ingredients for 4 servings:

  • 60 g semolina
  • 500 ml almond milk (almond drink)
  • some vanilla pulp
  • 200 g low-fat curd cheese
  • possibly vanilla paste
  • 1 handful of berries or fruits, frozen
  • 2 eggs
  • some sweetener

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

Bring the almond milk to a boil and add the semolina. Stir carefully with a whisk until the mixture thickens. For a finishing touch, I added a little vanilla bean paste. If you like, you can also add a few drops of sweetener here. Let the mixture cool. Mix together the quark, eggs, and sweetener. Feel free to add your own extras here. I also added a little vanilla bean paste here. Mix the quark mixture and semolina mixture. Taste and sweeten to taste if necessary. Transfer everything to a baking dish or (as I did) to four 370 ml (12 fl oz) preserving jars. Sprinkle with berries or fruit as desired and bake in a preheated oven at 180 degrees Celsius (350 degrees Fahrenheit) for about 20-25 minutes. If you like, you can also roast chopped nuts or almond slivers in a dry pan and sprinkle them on top after baking.
