Ingredients for 5 servings:
- 1 kg zucchini
- 2 small onions
- 1 tsp salt
- 1 tsp mustard seeds
- 3 tbsp sugar
- 6 tbsp vinegar, or 3 tbsp vinegar essence
- 3 cloves garlic
Instructions
Working time approx. 20 minutes; Rest period approx. 1 day; Total time approx. 1 day 20 minutes
Peel the zucchini, then slice it lengthwise and scoop out the seeds with a large spoon. Cut the zucchini into bite-sized pieces and place them in a large bowl with a lid. Add all the other ingredients, cover, and shake vigorously. Let it sit for 1-2 days.
