Shrimp butter

Ingredients for 4 servings:

  • 200 g fish fillet(s) (cod or redfish or similar)
  • 200 g butter, salted
  • 300 g shrimp (cooked)
  • 4 slice(s) smoked salmon
  • Worcestershire sauce
  • Lemon slices and dill for garnishing

Instructions

Working time approx. 30 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 30 minutes

Cook the fish fillet in gently simmering salted water for about 10 minutes and then allow to cool. Cream the butter until fluffy. Mash the fish finely with a fork and stir into the softened butter. Chop the shrimp and add it. Heat everything gently in a saucepan for about 5 minutes until it forms a homogenous mixture (do not let it runny!). Transfer everything to a bowl and chill overnight. Scoop out the plaice with a spoon, arrange on plates with a slice of smoked salmon on each one and garnish with dill and lemon slices. You can also fill the mixture into portion dishes, chill and then briefly dip it in hot water before turning it out. Tastes great as a starter with hearty bread.
