Side Dish: Hearty Sauerkraut Pot
The perfect side dish: hearty sauerkraut pot recipe with a picture and simple step-by-step instructions.
- 2 Glasses Sauerkraut
- 2 tbsp Lard / fat
- 1 tbsp Bacon cubes
- 2 tbsp Currants or raisins
- 1 small Can of pineapples, pieces
- 2 size Apple Elstar
- 1 great Leaf of laurel
- 1,5 tsp Peppercorns
- 2 middle Fresh onions
- 1 tsp Salt
- 2 Msp Black pepper from the mill
- Heat the bacon cubes and 1 tablespoon lard in a large saucepan. Leave the bacon out until it is a little crispy.
- Wash and peel the apples, remove the core and cut into large pieces. Peel the onions and also cut them into large pieces.
- Add onion and apple pieces to the bacon cubes and sauté until translucent.
- Sprinkle salt and pepper, bay leaf and peppercorns on the onion and apple mixture and sauté briefly.
- Now add the sauerkraut and fill up with water so that the cabbage is covered three quarters of the way.
- Bring the sauerkraut pot to the boil briefly and simmer for 25 minutes.
- Now add the pineapple pieces (without juice) and currants and simmer for another 45 minutes.
- Let the sauerkraut pot stand overnight and simmer for another 35 minutes the next day.
