Simple banana pancakes

Ingredients for 1 servings:

  • 1 large banana(s), ripe
  • 2 eggs, medium to small
  • some coconut oil, for frying
  • possibly cinnamon powder

Instructions

Very easy, very fast – those who hate cooking have no excuse

First, whisk the two eggs in a small bowl until well blended. Then, chop the banana and add it. Blend until almost no banana pieces remain and everything is evenly blended into a smooth mixture (add a little cinnamon if desired). Heat the coconut oil in a pan. Add small portions of the pancake batter and cook over low to medium heat. Flip carefully to ensure both sides are golden brown. Serve warm and enjoy. Additional sweetener is not necessary, as the banana already makes the batter sweet enough. If everything goes well, the pancakes will taste like delicious, baked banana!
