Ingredients for 1 servings:

  • 2 ½ cups wheat flour
  • 2 cups sugar
  • ½ cup cocoa powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 cup buttermilk, or sour milk
  • ½ cup margarine, melted
  • Water, hot, 1/3 cup
  • 2 eggs
  • 2 cups powdered sugar
  • 3 tbsp cocoa powder
  • 3 tbsp margarine, melted
  • 1 tsp vanilla flavor
  • 3 tbsp coffee, hot, or 6 tbsp hot water
  • Desiccated coconut

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Very delicious cake that can be found in every café on the island.

The cup used as a measuring cup holds approximately 160 ml. Dough: First, combine the dry ingredients, then add the remaining ingredients. Mix everything together (a spoon is enough). Pour the mixture into a greased or parchment-lined pan (35×26 cm) and bake in a preheated oven at 175°C for approximately 25 minutes. Glaze: Combine the powdered sugar and cocoa powder. Add the melted margarine, vanilla extract, and coffee or water. Stir until smooth and pour onto the still-warm cake. Then sprinkle the desiccated coconut over the cake. Icelanders also like to eat this cake with baked-in pieces of licorice. Tip: Double the recipe for a baking sheet. Decorate with your own taste instead of desiccated coconut.
