Ingredients for 8 servings:

  • 120 g sugar
  • 3 egg yolks
  • 3 egg whites
  • 60 ml oil
  • 60 ml water
  • 150 g flour, smooth
  • ¼ pt. baking powder
  • 2 pts. vanilla pudding powder
  • 60 g sugar
  • ½ liter cloudy apple juice
  • 3 apples, sour
  • ½ liter whipped cream
  • some cinnamon, for sprinkling

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Apple pudding sponge cake

Beat the egg whites until stiff peaks form. Beat the sugar and egg yolks until frothy, add the oil and water. Sift the flour with the baking powder and fold in the beaten egg whites. Spread the batter onto a greased and floured baking sheet and bake at 180°C (top/bottom heat) for about 15 minutes. Make a pudding from the pudding mix, apple juice, and sugar. Grate the peeled apples and add them to the pudding. Spread the cream over the sponge cake and let cool. Decorate with whipped cream and sprinkle with cinnamon.
