Ingredients for 1 servings:
- 250 g butter or (low-fat) margarine
- 200 g cream cheese spread
- 150 g cheese (Harzer or Quargel)
- 1 tsp, heaped baking soda
- 1 cup sour cream
- Caraway seeds
- pepper
- possibly condensed milk

How slim you make it is up to you
Melt the butter, processed cheese, and Harzer cheese in a saucepan. It can also be gently simmered—but be careful: it’s very likely to burn. If the mixture looks gritty, it’s ready. Once everything is mixed, add the caraway seeds, baking soda, and sour cream. Stir everything thoroughly, and then let the cheese cool with the lid closed. Stir occasionally (and nibble on it). If the cheese is too solid at the end, you can easily dilute it with canned milk. (I’ve never had to, though.) And now for the sweet side: Harzer cheese is low in calories, and processed cheese and margarine are available as light products—and I’ve tested it: It works just as well as the original recipe and still tastes great. We only eat homemade cheese at home now—store-bought simply can’t compare in taste! And to make it worthwhile: The cheese can also be frozen and thawed wonderfully.
