Soft Toffees in Chocolate Coating
The perfect soft toffees in chocolate coating recipe with a picture and simple step-by-step instructions.
- 100 g Dark chocolate or whole milk
- 15 g Palmin
- 125 ml Cream
- 100 g Cane sugar
- 1 tbsp Sour cream
- 1 tube Butter vanilla
- Chop the chocolate and melt it with the palmin in a water bath
- Pour the chocolate into a praline mold for 15 pieces and let it set in the refrigerator. Since the filling is soft, I reinforced the sides with a brush dipped in chocolate
- put the mold back in the refrigerator…. the chocolate should be very firm and cold as the filling is still warm
- Put the cream, cane sugar, sour cream and vanilla flavor in a saucepan and slowly bring to the boil
- Stir in for about 12 minutes +/- let cook … .. the consistency should be creamy, as can be seen on a photo
- Remove the pot from the stove and let it cool down
- Pour the mixture into a cream syringe with a perforated nozzle and inject it into the mold
- gently tap the mold so that the mass is evenly distributed …… let it cool down in the refrigerator
- heat the remaining chocolate in a water bath and seal the toffees with it
- Let it set in the refrigerator and carefully press it out of the mold
Tip:
- Instead of vanilla flavoring, the mass can also be flavored with soluble coffee or brandy
