Ingredients for 4 servings:

  • 500 g cheese (brick cheese)
  • 125 g water, warm
  • 2 tbsp vinegar
  • 4 tbsp oil
  • some salt and pepper
  • 1 pinch(s) of sugar
  • 1 onion(s)

Working time approx. 20 minutes; Rest time approx. 10 minutes; Total time approx. 30 minutes

Snack with brick cheese and onion

Product information: Backsteinkäse is a specialty cheese from the Allgäu region with red smear. Similar to Limburger cheese. Scrape the red smear off the cheese brick. DO NOT CUT! Slice the cheese and place it in a shallow bowl. Mix water, vinegar, oil, salt, sugar, and pepper and pour over the cheese. Let it sit for a few minutes. Slice the onion and mix it raw with the dressed cheese. Serve with farmhouse bread and fresh butter. Allgäu wisdom: Scrape the backsteinkäse = thrifty housewife. Trim the cheese edge = wasteful housewife. You can’t get anything out of it. Serve the cheese untreated = dirty housewife.
