Sour sausages Franconian style

Ingredients for 10 servings:

  • 30 Bratwurst, Franconian, fresh (no Nuremberg)
  • 15 m.-sized onion(s)
  • pinch(s) of salt
  • pinch(s) of pepper
  • 3 tbsp vegetable broth
  • 1 tbsp marjoram
  • 1 tbsp parsley
  • 3 tbsp vinegar essence
  • 1 tsp juniper berries
  • 5 bay leaves
  • 2 tbsp sugar
  • 1 liter white wine, dry to medium-dry
  • 1 liter of water
  • 50 g lard if needed

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the onions and slice them into not-too-thin rings, about three to four millimeters thick. Combine all ingredients—except the sausages—in a pot and simmer for one hour. When the onions are tender, add the sausages to the pot for ten minutes. Let them simmer and do not heat further. Brown bread goes very well with this dish—especially fresh bread.
