Spaghetti with pumpkin, ham and cream cheese sauce

Ingredients for 4 servings:

  • 400 g pumpkin flesh, diced
  • 200 g ham
  • 1 large onion(s)
  • 2 cloves garlic
  • 2 tbsp oil for frying
  • 125 ml vegetable stock
  • 200 g cream cheese, natural
  • salt and pepper
  • chili
  • Herbs of Provence
  • 400g spaghetti
  • e.g. Parmesan, freshly grated, optional

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Peel and finely chop the onions and garlic, and fry them in oil. Also finely chop the ham and fry it with the sauce. Add the pumpkin cubes and fry for a few more minutes. Now pour in the vegetable stock and simmer for about 10 minutes (or longer, until the pumpkin cubes are soft). Stir in the cream cheese and season to taste. Meanwhile, cook the spaghetti according to the package instructions and serve immediately with the sauce. Sprinkle with freshly grated Parmesan cheese, if desired.
