Spätzle – pasta salad

Ingredients for 6 servings:

  • 250 g spaetzle
  • 1 leek(s)
  • 1 large can of peach(s)
  • 200 g cooked ham
  • 1 small jar of Miracle Whip
  • 1 cup low-fat yogurt
  • 1 shot of whipped cream
  • 1 dashes lemon juice
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Cook the spaetzle according to the package instructions and let cool. Trim the leek and slice into rings. Strain the peaches, reserving the juice, then dice the peaches. Dice the ham in the same way and mix everything well in a bowl. In a separate bowl, mix the Miracle Whip with the yogurt, cream, lemon juice, and a little peach juice until well combined, and season with salt and pepper. Pour the dressing over the salad and mix well. Let it marinate and season again with salt and pepper before serving. I’m telling you, this is a hit at every party in the summer, but the salad is also delicious in the winter!
