  • 10 g Fresh yeast
  • 350 ml Buttermilk lukewarm
  • 1 tsp Honey to taste
  • 50 g Pumpkin seeds
  • 250 g Organic wholemeal spelled flour
  • 200 g Spelled flour 630
  • 10 g Salt
  • 1 tsp *Mein Sauerteigpulver
  • 20 ml Table vinegar
  1. Take a mixing bowl / food processor and add the crumbled fresh yeast, honey to taste and the lukewarm buttermilk. Let it stir once so that everything connects. Then add the pumpkin seeds, wholemeal spelled flour, spelled flour, salt, * my sourdough powder and table vinegar.
  2. Let everything knead together for about 6 minutes. Flour a work surface, place the soft, sticky bread dough on top, flour a little and then place in an oiled bowl. Cover and put in a warm place and let RISE for 1 hour.
  3. Preheat the oven to 230 ° degrees top / bottom heat. Take a baking pan of your choice and grease it. Take the baked dough out of the bowl and place it on the floured work surface again. Fold 4 times and shape depending on the baking pan.
  4. Fill in, sprinkle with flakes if necessary and put the lid on top (without it, of course). Put the bottom rail in the preheated oven. Bake the bread for 65 minutes and remove the lid in the last 10 minutes so that the bread has a nice crust.
  5. After baking, take it out and let it cool down a little in the tin, then turn it out later and let it cool down completely on a rack.
