Spelled Grain Bread

Ingredients
 

  • 250 g Wholemeal spelt flour
  • 250 Grief Spelt flour type 630
  • 21 g Yeast fresh
  • 4 tbsp Herb vinegar
  • 2 tsp Salt
  • 150 g Seeds, variety to taste. I had flaxseed, sunflower, and pumpkin
  • 500 ml Water

Instructions
 

  • I had bought a new silicone mold. There was this recipe included. I changed it a little to my taste (less yeast, longer resting time, no seeds on the crust).
  • Mix the water and yeast together, add salt and vinegar.
  • Now add the flour and the kernels. Process everything together into a smooth dough. Warning: dough is very runny. That is what is wanted.
  • Let the dough rest in a bowl in a warm place for about 4 hours. Pour the dough into the silicone mold and let it rest again until the mold is well filled.
  • Then place the bread in the oven preheated to 200 degrees (2 runners from below). Let it bake for about 1 hour (the baking time may vary depending on the oven).
  • The bread was a present for the neighbor who had her birthday. She asked for some bread from me. In order to show pictures of the cut, I cut it open in consultation with her and ate a fresh slice with good butter and salt. It was delicious. I now bake this bread more often in variations.
