Ingredients for 1 servings:
- 450 g sea salt
- 25 g garlic, dried
- 35 g ground turmeric
- 10 g coriander powder
- 25 g black pepper, freshly ground
- 30 g mustard seeds, ground, (coffee grinder)
- 20 g ginger powder
- 55 g cinnamon powder
- 10 g berries, pink, ground, (coffee grinder)
- 10 g coffee beans, ground
- 7 g cardamom powder
- 45 g sweet paprika powder
- 8 g thyme, dried and finely chopped
- 8 g rosemary, dried and finely chopped
- 8 g oregano, dried and finely chopped
- 8 g marjoram, dried and finely chopped
- 8 g savory, dried and finely chopped
- 100 g sugar
Instructions

Marinate and let it steep yourself, prepare in advance
Combine all the spices and herbs in a blender and chop and mix for about 1 minute. An airtight container is best for storage! To marinate meat, use 2 tablespoons of the spice mix and about 3 tablespoons of olive oil (it should form a paste, so you can use more olive oil if you like)! Place the meat and marinade (paste) in a freezer bag, tie it tightly, and knead the whole thing thoroughly. Marinate in the evening or first thing in the morning. The meat will absorb the flavor of the spices beautifully and become very tender. I have many of the herbs mentioned above in my garden, so it would be a shame not to use them. If you have them, take the herbs, chop them, and place them on baking paper on a baking sheet. The oven should be set to 80 degrees Celsius; that’s the quickest way. It takes about 3 hours (it works with garlic, too). The spice mix also makes a great gift for friends and family.
