Spiced caramel nuts

Ingredients for 6 servings:

  • 300 g nuts and seeds, mixed
  • 150 g sugar
  • 4 tbsp water
  • 1 tsp salt, level
  • ½ tsp ground cinnamon
  • 1 pinch(s) of cayenne pepper or chili powder
  • 1 tsp. clove powder
  • 1 pinch of cardamom powder
  • 1 pinch of ginger powder
  • some butter

Instructions

Working time approx. 15 minutes; Rest time approx. 25 minutes; Total time approx. 40 minutes

This delicious and quick snack made with spiced caramel nuts is perfect for any party and is also perfect for the upcoming Christmas season. It also makes a great culinary gift. 1. Line a work surface with baking paper and grease it (e.g. with butter). 2. Put the sugar in a pan, preferably with a thicker bottom for better heat distribution, and spread it evenly. 3. Add 4 tablespoons of water and melt the sugar over medium heat, allowing the water to evaporate. Only stir when the sugar slowly begins to turn brown. If the sugar clumps, add a little more water. Be careful, though, as the steam can cause burns. 4. Now stir in the nut and kernel mixture and the spices with a wooden spoon. Continue stirring until the sugar turns golden brown and has completely coated the nuts/kernels. 5. Then pour the sugar onto the baking paper, spread it out, and allow it to cool and set. Then, briefly roll over the mixture with a rolling pin to loosen any clumped nuts/kernels. 6. Eat immediately or package it nicely as a gift. Have fun preparing it – enjoy!
