Spicy beef salad

Ingredients for 4 servings:

  • 400 g lean beef, leftovers from roasting or cooked soup meat
  • 1 m.-sized onion(s)
  • 1 bell pepper(s), yellow or red
  • 3 gherkins
  • 1 tbsp mustard, hot
  • e.g. salt and pepper
  • e.g. chili salt
  • 6 tbsp tomato ketchup, mild or hot
  • 1 tbsp vinegar
  • 1 tbsp oil
  • 1 tbsp cucumber juice
  • 1 tbsp parsley, chopped or chives

Working time approx. 20 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 20 minutes

great use of leftovers

Cut the meat into slices, then into strips. Slice the gherkins. Trim and strip the bell peppers. Combine the ingredients in a bowl and mix. Peel and finely dice the onion and place it in a separate bowl. Add the ketchup, mustard, vinegar, oil, and pickle juice and mix. Season to taste with salt, pepper, and chili salt and stir into the meat. Sprinkle with parsley or chives and serve. The salad tastes best after it has been left to marinate for a few hours, and goes well with hearty farmhouse bread.
