Spicy Prawns in Roasted Basket

The perfect spicy prawns in roasted basket recipe with a picture and simple step-by-step instructions.

For the garlic mayonnaise

  • 100 ml Edible oil tasteless
  • 50 ml Room temperature milk
  • 1 Pc. Clove of garlic
  • 0,5 Pc. Lemon untreated
  • 1 tsp Mustard medium hot
  • 1 shot Vinegar

For the hash browns

  • 130 g Potatoes
  • 130 g Carrots
  • 1 Pc. Shallot
  • 1 Pc. Egg
  • 1 tbsp Flour
  • Sunflower oil

For the prawns:

  • 250 g Prawns Provence
  • 2 tbsp Olive oil
  • 0,5 Pc. Lemon untreated
  • 1 shrub Rosemary fresh
  • 2 shrub Fresh thyme
  • 1 tsp Paprika powder

  • Sea salt from the mill
  • Pepper from the grinder
  1. The mayonnaise: Peel the garlic and cut into very fine cubes. Put the milk, mustard and garlic cubes in the hand blender jar and mix with the hand blender until frothy. Then gradually add the oil until it has a creamy consistency. It is possible that not all of the oil is required. Then season with the juice of half a lemon, a dash of vinegar and sea salt. Pour into a small mason jar, close and refrigerate.
  2. Peel the potatoes (I have potatoes from the local farmer, I just wash them and leave the skin on), peel the carrots and cut off the ends. Then grate both roughly. Peel the onion and cut into fine cubes. Put everything in a bowl, add the egg and flour, season well with salt and pepper and mix everything together. Put sunflower oil in a hot pan and fry half of the grated mixture to make a hash brown. Then put the rösti in a small baking dish and shape into a basket. Do the same with the second half of the mixture.
  3. The prawns: put olive oil in a pan that is not too hot. Add the thyme and rosemary. Add the prawns and sprinkle with the paprika powder, then sweat until translucent. When the prawns have turned color, deglaze with the juice of half a lemon. Add a little zest of lemon peel and remove from the hot plate and remove the sprigs of thyme and rosemary. Then put the prawns in the roasted basket. Cook the casserole dishes in the pre-heated oven at 200 degrees or on a grill for another 2 minutes. Finally, put a blob (about 1 tablespoon) of the mayonnaise on top and serve.
