Spinach salad in radicchio leaves

Ingredients for 4 servings:

  • 200 g spinach (baby spinach)
  • 1 radicchio
  • 1 orange(s)
  • 2 onions, red
  • 100 g yogurt, Greek
  • 2 tbsp olive oil
  • salt and pepper
  • 100 ml orange juice
  • 1 pinch(s) cumin

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

a light starter

Wash the spinach and spin dry. Peel the orange, remove the segments, and cut into pieces. Remove the radicchio leaves and place two leaves, one inside the other, on a plate for each serving. Slice the onions into rings. Mix the yogurt, olive oil, salt, pepper, orange juice, and cumin well. Mix the spinach, orange segments, and onion rings with the dressing and stuff the radicchio leaves. Serve with fried shrimp or chicken breast. I served it with Kieler Sprats.
