Ingredients for 6 servings:

  • 500 g quark (20%)
  • 500 g double cream cheese
  • 2 cups of cream
  • 200 g sugar
  • 3 packets of vanilla sugar
  • 1 jar morello cherries
  • 2 tbsp cornstarch
  • 100 g almond flakes
  • 1 tbsp butter
  • 2 tbsp sugar

Working time approx. 30 minutes; Total time approx. 30 minutes

Cream cheese / quark cream with morello cherries and caramelized almond flakes

Mix the quark with cream cheese, 1 cup (unwhipped) cream, 200g sugar, and 3 sachets of vanilla sugar until smooth. Then whip 1 cup of cream and carefully fold in. Drain the morello cherries, reserving the juice. Heat the cherry juice and stir in 2 tablespoons of cornstarch. Bring to a boil once, then let cool. Before the mixture becomes too thick (i.e., while it’s still lukewarm), stir in the cherries. Pour half of the quark cream into a glass bowl, layer the cooled, thickened cherries on top. Spread the other half of the quark cream on top (depending on the size and shape of the bowl, you can, of course, make several layers). For the decoration, heat 1 tablespoon of butter in a non-stick pan. Melt 2 tablespoons of sugar in it and caramelize the 100g flaked almonds. Sprinkle the finished almond flakes over the cream – it’s best to do this while they’re not completely cooled, otherwise they’ll stick together in the pan to form a tough mass! Keep refrigerated until ready to serve.
