Stollen muffins

Ingredients for 12 servings:

  • 100 g fruit mix
  • 2 tsp spice mix for Stollen
  • 2 tbsp rum
  • 100 g butter (melted)
  • 2 eggs
  • 50 g sugar
  • 150 g honey
  • 100 ml milk
  • 350 g flour
  • 2 tsp baking powder
  • Salt
  • Powdered sugar, for dusting

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

In a bowl, combine the fruit mix with the Stollen spice and rum and let it sit for 20 minutes. In another bowl, stir the remaining ingredients (butter, eggs, sugar, honey, milk, flour, baking powder, and a pinch of salt) into a smooth batter. Now mix in the soaked fruit. Pour the batter into a greased muffin tin or paper baking cups. Bake in the center of a preheated oven (200°C) for about 20 minutes. Once cooled, dust the muffins with powdered sugar.
