Strawberry or raspberry-apple oatmeal cookies

Ingredients for 1 servings:

  • 4 small apples
  • 100 g raspberries or strawberries, frozen
  • 100 g oat flakes, fine
  • 100 g oat flakes, wholegrain
  • 3 m.-sized eggs
  • 250 g low-fat curd cheese
  • some sweetener, liquid
  • ½ tsp cinnamon powder
  • ½ vanilla pod(s), the pulp
  • ½ pack of baking powder

Instructions

Working time approx. 30 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 30 minutes

for approx. 35 cookies

Wash the apples and coarsely grate or grate them, including the skin. Add the frozen raspberries or frozen strawberries. If necessary, warm them briefly in the microwave or in a saucepan so that they can be easily mixed into the mixture later. Beat the eggs until frothy, mix them with the oats, and add them to the fruit. Let them stand for about 10 minutes. Preheat the oven to 180°C. Mix the low-fat quark with the sweetener, cinnamon, baking powder, and the seeds of half a vanilla pod. Add this to the fruit, oats, and egg mixture and mix everything together. Let the mixture stand for another 10 minutes. When the oven is warm enough, use a tablespoon to drop the mixture into small chunks onto the baking sheet lined with baking paper. Bake the pastry for about 35-40 minutes. It will keep in the refrigerator for up to 3 days.
