Tiramisu di Fragole
Wash the strawberries and slice 300g of them. Purée the remaining strawberries with the orange sugar and chill. Beat the egg whites with the powdered sugar on high speed until stiff peaks form and add 4 drops of orange flavoring. Then fold the egg whites into the mascarpone with a tablespoon. Caution: Do not use a mixer, or the mixture will collapse and become runny! Now mix the Cointreau with the orange juice and pour over the strawberry slices. Spread a layer of biscuits on the bottom of a bowl or shallow dish and top with a layer of strawberries. Then spread some of the mascarpone over the top and continue until all is used up and the mascarpone forms the final layer. Do not soak the biscuits in orange juice or similar beforehand; this will happen automatically! Finally, pour the strawberry purée over the tiramisu and chill (preferably overnight). Just before serving, decorate with grated white chocolate.
