Stuffed baked potato with bacon and cheese

Ingredients for 2 servings:

  • 2 large potatoes, mainly waxy
  • 4 slices of cheese (e.g., sharp cheddar)
  • 4 slices of bacon
  • 4 basil leaves
  • 1 tsp olive oil
  • Salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Steam the potatoes for 20 minutes. Brush two pieces of aluminum foil with olive oil. Place two slices of bacon side by side on the foil, then place the potato on top. Then cut the potatoes into two thick slices, sprinkle each with salt, top with cheddar and basil, and wrap with the bacon. Grill the potatoes for another 10-15 minutes on each side; the bacon will be crispy and the cheese will melt creamy. Ideal as a side dish for a barbecue or with hearty steaks. The pre-cooked potatoes can be easily prepared and simply placed on the grill later.
