Ingredients for 5 servings:
- 2 small turnips, or 1 large
- 8 m.-sized carrot(s)
- 6 large potatoes
- ½ liter meat broth
- 2 tbsp rapeseed oil or sunflower oil
- 500 g smoked pork, neck or salmon roast, in pieces or slices)
- Salt
- pepper
- Sugar
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes
Peel and dice the turnips. Heat the oil in a large pot (approx. 5-6 liters) and sauté the turnip cubes for about 10 minutes. Don’t forget to stir, or they will stick. Peel and dice the carrots and potatoes, then add them to the turnips. Sauté for about 5 minutes. Then add the meat broth. Stir, place the meat on top, and simmer over medium heat for about 45 minutes. Remove the meat and cut into smaller pieces, if desired. Using a masher (not an immersion blender, as it needs to remain somewhat chunky), mash the turnip, carrot, and potato cubes into a puree. Season to taste with salt, pepper, and sugar. Add the meat and heat briefly again. If you like, you can also serve it with Mettenden (a kind of meat dish).
