Swedish-style meatballs

Wash the potatoes, cook in their skins, and then peel them. Press the potatoes through a potato ricer and let cool. Peel the onion and finely dice. Heat 1 tablespoon of oil in a pan and fry the onion until translucent, remove from the pan and let cool. Wash the parsley, pat dry, and finely chop. Knead the potatoes with the minced meat, ground beef, onions, eggs, parsley, and mustard. Season the mixture with salt and pepper to taste, then form about 15 meatballs from it. Heat a little oil in a pan and fry the meatballs in batches until golden brown. Tip: These dumplings are great for preparing for a party. Fry them until not too crispy and – just before the guests arrive – place them in a casserole dish. Then bake at about 180°C on the middle shelf until nicely browned.
