Swedish Style Fried Herring (Stekt Strömming)

Ingredients
 

  • 2 kg Fresh herring fillets
  • 250 g Whole wheat or spelled grains
  • 150 g Wheat flour
  • Salt pepper
  • Frying fat
  • 300 ml Vinegar essence
  • 1200 ml Water
  • 600 g Sugar
  • 3 tbsp Mustard seeds
  • 4 Bay leaf
  • 1 tbsp Whole black peppercorns
  • 5 Large onions

Instructions
 

  • Coarsely grind the grains in a grinder and set aside. Wash the herrings, pat dry, season with salt and pepper. Now turn the fish in the flour and the ground cereal grains. Fry the herrings (this can be done in the frying pan or on the grill) and set aside. Now bring the water, vinegar essence, sugar and the spices to the boil briefly, then allow to cool. Layer the herrings alternately with the onions in a bowl and pour the vinegar over them. The herrings should be well covered with the brew. Put the bowl in the fridge and enjoy the herrings after 2 days. God aptit!
