Sweet and sour liver goulash

Ingredients for 4 servings:

  • 125 g bacon, fattier
  • 2 medium-sized onions, diced
  • 500 g liver(s) (e.g. beef liver)
  • 250 ml vinegar or pickle juice
  • 200 g gherkins
  • Sugar
  • salt and pepper
  • possibly sauce thickener

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Cut the fatty bacon into small cubes and fry. Add the diced onions and fry briefly. Briefly fry the trimmed and finely chopped liver (approx. 1 x 1 cm pieces), then deglaze with water and vinegar (or pickle juice). Simmer for 5 minutes. Season with sugar, salt, and pepper. Thicken to taste. Finally, add the finely sliced ​​gherkins. Do not cook any further, but simply allow the gherkin pieces to warm slightly. This goes best with rice.
