Ingredients for 4 servings:
- 125 g bacon, fattier
- 2 medium-sized onions, diced
- 500 g liver(s) (e.g. beef liver)
- 250 ml vinegar or pickle juice
- 200 g gherkins
- Sugar
- salt and pepper
- possibly sauce thickener
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes
Cut the fatty bacon into small cubes and fry. Add the diced onions and fry briefly. Briefly fry the trimmed and finely chopped liver (approx. 1 x 1 cm pieces), then deglaze with water and vinegar (or pickle juice). Simmer for 5 minutes. Season with sugar, salt, and pepper. Thicken to taste. Finally, add the finely sliced gherkins. Do not cook any further, but simply allow the gherkin pieces to warm slightly. This goes best with rice.
