Ingredients for 8 servings:
- 4 apricots, dried
- 2 slices white or mixed bread, stale
- 15 g butter
- 2 eggs
- 3 tbsp milk
- 1 tbsp sugar, brown
- 1 ½ tbsp walnuts, chopped
- some cinnamon
- some cardamom, ground
- 1 pinch of salt
- some clarified butter, for frying
Instructions
Working time approx. 15 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 15 minutes; Total time approx. 4 hours 30 minutes
as a sweet main course or dessert
Pour warm water over the apricots the day before and soak them overnight, or at least for a few hours. Drain and dice finely. Cut the bread slices into cubes and toast them in the heated butter until golden brown. Whisk the eggs with the milk, sugar, and spices. Add the bread cubes, apricots, and walnuts. Mix everything well and let it sit for a while. The mixture should be soft but still malleable. Shape it into eight rounds and fry them in clarified butter over medium heat until golden brown on both sides. Serve on a fruit platter.
