Tangerine Coconut Muffins

The perfect tangerine coconut muffins recipe with a picture and simple step-by-step instructions.

  • 200 g Sifted flour
  • 2 teaspoon Baking powder
  • 150 g Sifted powdered sugar
  • 50 g + 1 tbsp Desiccated coconut
  • 0,5 teaspoon Grated orange peel
  • 1 Egg
  • 125 ml Oil
  • 200 ml Mixed tangerine juice + water
  • 1 shot Orange liqueur
  • 1 Can Mandarin oranges
  • ########

  1. Pour off the mandarins … collect the JUICE and fill up with water to 200 ml !!
  2. Put ALL ingredients in a bowl and stir together
  3. Line a muffin tin with the paper liners and distribute the batter evenly in it, cover with the mandarins and sprinkle with desiccated coconut (1 tbsp)
  4. Preheat the oven to 180 ° C and bake the muffins on the middle rack for about 20-25 minutes
  5. Let the muffins rest in the baking tray for 10 minutes and then place them on a wire rack to cool completely.
