Tangerine Coconut Muffins
The perfect tangerine coconut muffins recipe with a picture and simple step-by-step instructions.
- 200 g Sifted flour
- 2 teaspoon Baking powder
- 150 g Sifted powdered sugar
- 50 g + 1 tbsp Desiccated coconut
- 0,5 teaspoon Grated orange peel
- 1 Egg
- 125 ml Oil
- 200 ml Mixed tangerine juice + water
- 1 shot Orange liqueur
- 1 Can Mandarin oranges

- Pour off the mandarins … collect the JUICE and fill up with water to 200 ml !!
- Put ALL ingredients in a bowl and stir together
- Line a muffin tin with the paper liners and distribute the batter evenly in it, cover with the mandarins and sprinkle with desiccated coconut (1 tbsp)
- Preheat the oven to 180 ° C and bake the muffins on the middle rack for about 20-25 minutes
- Let the muffins rest in the baking tray for 10 minutes and then place them on a wire rack to cool completely.
