Ingredients for 1 servings:

  • 2 eggs, hard-boiled
  • 100 ml sunflower oil
  • 1 tsp mustard
  • 1 tsp vinegar
  • 1 tbsp cucumber water
  • 1 dashes citric acid or juice
  • ½ onion(s), red
  • 3 pickles
  • basil
  • Parsley
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

With boiled egg

First, take the peeled eggs and place them in a tall container that is ideal for a hand blender. Then add a little sunflower oil, but not all of it. You will need more or less oil depending on the size of the eggs and your taste, or the consistency you want to achieve. So add the oil in small drops while blending. Once you have reached the desired consistency, use the hand blender to mix in the mustard, vinegar, citric acid, and pickle juice. Finally, add the onion, if desired. Finely chop the pickles and herbs and stir in with a spoon. Season to taste with salt and pepper. Blending just the eggs with the oil and mustard also makes an excellent mayonnaise.
