Tofubology with Spelled Knobs

The perfect tofubology with spelled knobs recipe with a picture and simple step-by-step instructions.

Bolognese:

  • 200 g Tofu
  • 1 Diced onion
  • 2 Garlic cloves pressed
  • 3 tbsp Olive oil
  • 250 ml Pinot Noir
  • 250 ml Tomato puree
  • 1 tsp Agave syrup
  • 1 tsp Chopped rosemary, thyme, oregano
  • 2 fresh Bay leaves
  • Garlic pepper, salt and pepper from the mill, herbal salt
  • 4 tbsp Tomato paste

Knöpfle:

  • See spelled spaetzle in my KB!
  • Use a little more flour to make the dough a little tougher
  • So that the dumplings are already round! 🙂
  • Had a few more TK! Heat degrees in hot water!

Bolognese:

  1. Crumble tofu. If it still contains a lot of water, squeeze it out in a tea towel! Heat the oil in a pan and fry the tofu until crispy! Approx. 5-8 minutes. Then add onions and roast them briefly!
  2. Deglaze tofu with 150 ml red wine and reduce! Crumple the bay leaves a little, then the aroma will come out better! Only works with fresh ones! Add. Then add tomato puree, agave syrup, chopped herbs and simmer. Season to taste with garlic pepper, salt, pepper and herbal salt!
  3. Add the rest of the red wine and serve! Who likes sprinkle with grated cheese!
