Tomatillo "marmalade"

Ingredients for 1 servings:

  • 1 kg tomatillos
  • 2 medium-sized lemons, organic
  • 300 g sugar
  • 1 pack of gelling agent (Konfitura) or another agar-agar product

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 33 minutes

Peel the tomatillos, wash them, and cut them into small pieces. Peel the lemons and cut the rind into very fine strips. Mix the gelling agent with the tomatillo pieces and stir in the sugar, lemon zest, and the juice of both lemons into the fruit mixture. Bring the fruit mixture to a boil while stirring and simmer for 3 minutes. Test for setting! Pour the jam into approximately 6 jars while still hot.
