Tomato salad with blood orange maple syrup dressing

Ingredients for 2 servings:

  • 300 g tomatoes
  • 2 spring onions
  • 1 large blood orange(s)
  • 1 tbsp maple syrup
  • 3 tbsp rapeseed oil
  • salt and pepper

fruity, quick and easy

Wash the tomatoes, chop them, and remove the stems. Slice the spring onions into rings. For the dressing, halve the blood orange and juice it. Combine the blood orange juice with the maple syrup, rapeseed oil, salt, and pepper in a bowl and mix well. Mix the dressing with the tomatoes and spring onions and let the salad marinate for about 1 hour.
